Southwest Black Bean Salad

Southwest Black Bean Salad
I found this recipe on Pinterest and I just had to try it, mainly because the picture just looked amazing! The recipe I found makes 12 servings, but I listed ingredients for only a few servings.


1/2 a pack of frozen corn, thawed. I would use 4 fresh pieces of corn instead but my grocery store didn’t have any at the time.

1 15.5 ounce can of black beans, rinsed and drained

1 tomato chopped

1 large avocado, diced

A small handful of  finely chopped of red onions

1 lime, juice of

1 tbsp of cilantro

Salt and fresh pepper to taste.


Combine all ingredients and serve. Add avocado before serving.
